Dundee Cake
Though this award-winning cake was invented by Keillers of Dundee in the late 1800s, it belongs to a tradition of quality Scottish cake-baking dating back to the Auld Alliance with France (1295-1560). Established in the 1500s as Caik-baxteris (cake-bakers), they learned from the refined methods of French pâtissiers, making them distinct from bread-bakers.
